Meal Plan Monday #12

Last Wednesday I tried out the Chicken Ranch Pasta Salad. Now I’m a huge Ranch fan, so I was really excited about trying this. The recipe, which made a ton, didn’t actually call for a lot of dressing. You also mixed it with a lot of Parmesan Cheese, so it wasn’t very creamy. I ended up adding more ranch so it went farther. If I made it again though I would add more Ranch and less cheese. The flavor of the salad was good, and I loved that I was getting so many good veggies from it (even though my stomach didn’t agree with me). Next time I think I’ll try cooking the veggies before mixing them in so they’re easier for me to digest. The recipe said you could saute them first if you wanted, but I like the flavor of them raw and I wanted some crunch in the salad. It was good though, and it will stretch far to give me a lot of meals.
This week is all about leftovers. I wanted to try a new recipe on Wednesday to review again, but I have so many leftovers that I have got to eat them up or they’re going to go bad. That’s the thing about being a single mom with a little one that doesn’t eat the same food for dinner. The recipes that you find online really go far. Luckily I don’t mind leftovers, and I’m looking forward to a week that requires little cooking. I’ll still have a recipe review for you next week though because I haven’t reviewed the Party Veggie Pizza yet.

Saturday – Spaghetti and Grands
Sunday – Dinner at Mom’s
