Meal Plan Monday #4

While I don’t think we eat bad, I know that Nick and I could eat a bit better. With that in mind my goal this week was to start adding more fruits and vegetables into our meal plans. I’ll admit I’ve not always been good at this, so I know it’s going to take some work. I think I can make it happen though. This week is going to be a bit of a lazy meal plan week due to all of the things we’ve got going on. Nick’s birthday has a lot to do with it too. We’ve got his birthday meal tonight and his birthday party on Saturday. I really don’t mind having an easy week though. Of course I’ll probably wish it wasn’t an easy week after I’m all done with Nick’s birthday party! Those are always exhausting!
Meal Plan – Week of April 21, 2014
Monday – Nick’s Birthday Dinner! Most likely we’ll end up at McDonald’s. Not terribly exciting, but there aren’t many places Nick will eat at.
Tuesday – Cordon Bleu, Corn, and Pear Slices
Wednesday – Left over Crockpot Apricot Chicken and Pillsbury Grands
Thursday – Leftover Taco Pie
Friday – Chicken Nuggets, Baked Sweet Potato, and Grapes
Saturday – Nick’s Birthday Party! We’re doing pizza, salads, and of course cake. For his Car’s Birthday Party last year we did a Taco Bar that was awesome, but it was a ton of work. This year we decided to go an easier route.
Sunday – ??? I honestly have no clue what we’ll do for dinner this night. We’re going to see Thomas the Train during the day, so we’ll probably have lunch out. Dinner maybe something easy like cereal. It’ll just depend on what we end up doing for lunch. Do you know of any good recipes for a single mom? I’d love to hear them!

I love getting ideas from other’s meal plans. I have never been really good at planning our meals and these post really do help.
It always amuses me how much we overlap. We are having Austin’s birthday this weekend with a salad and pizza menu too. Can’t beat easy with a 3 year old, but it’s so hard to believe we’ve reached that point already! Happy Birthday Nick and good luck with your busy week.
