Meal Plan Monday
Happy Monday!  I must say that I’m ready for a new week.  Last week was far from the best.  Things went well with my meal plan though.  A silver lining in an up and down week.  There’s nothing like having a meal plan in place to keep your crazy week grounded.  There are some unfinished plans still for this week, so for my meal plan I scheduled a lot of leftovers as well as some easy to make favorites.  No matter what our plans end up being my meal plan should be able to handle it.

Now onto this week’s recipe review.  You may remember that last week I said I was going to review the Pillsbury BBQ Chicken Pizza.  My problem was that the recipe was for how to cook it on a grill, and I didn’t have one to use.  I instead attempted to make it using the oven, and it really went quite well.  I first cooked the pizza crust for the minimum amount of time listed.  Then I put the toppings on and cooked it for another 4 (or so) minutes.  Next time I would cook the crust another minute or two at the start and only 3 to 4 minutes at the end.  It still tasted great though.  It was such a nice change to regular pizza, and it was so easy to make.  I used the precooked chicken cubes again and just warmed them up in the microwave.  This recipe doesn’t make a huge pizza though.  You’ll probably want to double it, or add some sides, if you’re feeding more than just a couple people.

Tuesday Autumn Chopped Salad (Recipe to be reviewed next week)

Wednesday – Breakfast for Dinner – We might be going to the zoo with the family this day, so I figured this would work no matter what ends up happening.

Thursday – Leftover Pillsbury BBQ Chicken Pizza

Friday – ??? Mom’s ??? Dinner out ??? – I have an Origami Owl event until 5:30 this day, so I’m not exactly sure 0

Saturday Sweet and Crunchy Chicken Salad and Grapes

Sunday – Chicken Nuggets, Baked Sweet Potato, and Grapes
