Meal Plan Monday
I often am amazed by how fast the weeks can fly by.  I can’t believe it’s already time for another Meal Plan Monday!  Last week ended up being a bit of an off week.  It was full of a sick kiddo and a four day migraine for me.  Needless to say my meal plans fell out the window for the most part.  When you make a meal plan for two, and one of those is a little one that does his own thing for dinner and isn’t always home for dinner it’s easy to change things.  There are days that I wonder what it will be like when Nick will actually sit down and eat a meal with me.

I still feel stuck in a food rut, but I have spent some time on Pinterest finding some new recipes.  I admit that I’m pretty picky though.  I need things that are easy to make and that require only ingredients that I would, for the most part, normally buy.  Add in the fact that there are many things that I can’t eat and finding recipes becomes even harder.  Truthfully I’m ready for the weather to warm up so I can start making my summer recipes!

Meal Plan – Week of May 5, 2014

Monday – Hot Dogs, Baked Beans, and Side Salad

Tuesday – Leftover Birthday Pizza

Wednesday – Cordon Bleu, Leftover Veggies, Pear Slices (I realize this has been on my plan for two weeks now.  I still haven’t gotten to eat it yet.)

Thursday – Scrambled Egg Rollups

Friday – Homemade Grands Pizzas

Saturday – Apricot Chicken and Grands

Sunday – Mother’s Day Dinner at Grandma’s (steak!)
