Taco Pie
Finding foods that little ones like, and want to eat, can be a challenge for any parent. Add in a food allergy (sometimes multiple ones) and it can often feel down right impossible.
Months ago I decided to see if Nick would like taco meat. I was desperate to get him to eat something new. I put a little of the seasoned meat in a bowl and then I put some cheese on top. He loved it! In fact I had to get him more. Then I decided to take the meal up a level. I made a taco pie. Now I love taco pie, but Jason doesn’t, so it’s been one of those meals that I’ve been waiting on kids for so I would have someone to eat it with me. Luckily for me Nick liked it as well. I wouldn’t say its his favorite meal, but he’ll eat it every once in awhile. At least it’s a change.
Taco pie is really easy to make. You can make your own pie crust, but I prefer to speed things up by using a Pillsbury crust (one of the rolled ones in the red box). I am a huge fan of Pillsbury because most of their items are egg free. This recipe is also easy to modify. I am allergic to citric acid, so I omit the salsa when I make it.
Taco Pie
Serves: 4
Ingredients:
1 pie crust -cooked and cooled
1 lb ground beef
1 package taco seasoning (I use 1/2 a package for less spice)
1 can refried beans
1 jar salsa
2 cups cheese (I use Colby-jack, but use what you like best)
Nacho chips crushed
Sour Cream
Steps:
Bake pie crust.
Brown the meat and drain. Then add the taco mix and water as instructed on the seasoning package. Cook and set aside.
Mix the refried beans with 1/2 a jar of salsa.
Layer the pie crust with 1/2 of the refried bean mixture, 1/2 of the meat mixture, and 1/2 of the cheese. Then repeat.
Bake at 350 for 20-25 minutes.
Top with remaining salsa, sour cream, and chips to taste.

It is pretty easy (except for the putting on the second layer of beans :-p). I love that I can prep a lot ahead of time.
I love finding different versions of taco. I’ll be trying this one. thanks
Me too. I love taco things. They’re one of the few foods I don’t get tired of.
Sounds yummy! I’ll have to try it…and see if I can find a gluten-free pie crust!
It is yummy! Now days I would guess you could find a gluten-free crust somewhere.
Is unison your Mom’s receipt? It is a good one.
Yes it is.
