Meal Plan Monday #1

For a few months last year I did a great job planning our meals out, then I didn’t do it so well, and eventually the planning pretty much fell through the cracks. When Jason and I separated a little over a month ago I made no plans at all. I ate what I could find in the house. Truthfully for a week or so I didn’t care what I ate anyways, and then we got sick so I really didn’t want to eat then. Now I’m starting to get back into the swing of things by using my new Meal Planner (Have you entered to win one yet? You should!).

Every Monday I will be sharing my weekly meal plan with all of you. Right now it’s fairly basic because I am trying to eat the food that we have in the house. I’m hoping to start finding new great things to add as time goes along though, and I will be linking to all of the recipes for our meals. Since it’s just me and Nick I’ll be highlighting meals that are good for single moms. Nick often won’t even eat what I eat, so many of my meals will be good for even just one person. You don’t have to be a single mom to make use of these meals though. If you’re spouse is often gone at dinner time (Jason used to be a work for five dinners a week) than you probably will still find these recipes useful.
Meal Plan – Week of 3/31/2014
Monday – Burger and Fries
Tuesday – Chicken and Black Bean Burritos (I’m going to attempt making only two instead of four and refrigerating the extra beans and chicken. We’ll see how that goes.)
Wednesday – Hot Dog with a Side Salad
Thursday – Frozen Rib Sandwich and Baked Sweet Potato (See what I mean about eating up what is in the house? I bought these sandwiches for Jason to take to work to eat.)
Friday – Mac & Cheese with Banana Bread
Saturday – Dinner at Mom’s (Night off from cooking!)
Sunday – ????? (We have to go to a birthday party this day in the late afternoon, so I have no clue what we’re going to want)

I REALLY need to start meal planning. I keep thinking it would be so easy and make my life less stressful. You have inspired me (making it a feature of your blog is a great idea, no getting out of it that way.)

Thank you for the meal plan! My husband works nights and is never home . These are easy and my grandkids woukd eat them!
