Meal Plan Monday #11

You may remember that last Wednesday I was trying out a new recipe that I was really excited about. The recipe was for Cheesy Pumpkin Shells with Bacon. First I have to say that they were so good! I could hardly wait for them to finish baking because my house smelled amazing! I have to say though that this wasn’t a great single mom recipe. There was a lot of prep work, and parts of it was very messy. I made this on a night when Nick was with his dad, so it worked out OK, but unless you have older kids I would not suggest making this when there’s no one around to help watch the kids. That being said this recipe made enough for me to easily eat for four meals, so the leftovers will be great. In fact it’s what I having for dinner tonight. I can’t wait! I’m going to be trying a new recipe on Wednesday again this week, so be sure to stop by next week to see what I thought of it!
Meal Plan – Week of June 9, 2014
Monday – Leftover Cheesy Pumpkin Shells with Bacon and Grands
Tuesday – Leftover Ribs, Mashed Potatoes, and Applesauce Salad
Wednesday – Chicken Ranch Pasta Salad and Grands (This week’s new recipe. I love anything ranch, so I think this will be really good!)
Thursday – Breakfast for Dinner – Leftover waffles
Friday – Party Veggie Pizza
Saturday – Crab Cakes, Baked Sweet Potato, and Pear Slices
Sunday – Father’s Day (Not sure what we’re doing yet, but I won’t be cooking.)
