Meal Plan Monday
How has your meal planning been going?  I know the craziness of summer can often change plans.  We had some of that this past week, but I was mostly able to stick with our meal plan.  I must say I was pretty proud of that.  The nice thing about planning your meals more than one day in advance, or on the day of which is what I used to do, is you can look at your schedule to see how you can change things up when needed.  This was really helpful for me last week, and it’s why I was still able to mostly stick with my meal plan.

The new recipe that I will be reviewing this week is Chicken Ranch Tacos.  These were pretty good.  You could taste the ranch dressing a little, but I felt it made the taste of the taco seasoning more prominent.  I actually only used half of the packet of seasoning (that’s what I normally use for a pound of burger) yet it was a bit too strong for me.  Next time I want to use the same amount, but use more chicken.  Three cups of chicken was hardly enough for me to get two meals out of it.  Now for the chicken I used the precooked chicken cubes from Tyson that you can buy in the freezer section.  It’s a bit more expensive, but it saved me a lot of time.  When you a busy, single, work from home mom time is very important!  I don’t know if this will really go on my main rotation menu, but I certainly will make it again.  It is a nice change to regular tacos.

Meal Plan – Week of July 7, 2014

Monday – Leftover Slow Cooker Sesame Chicken and Crab Rangoon

Tuesday – Leftover Chicken Ranch Tacos

Wednesday Pillsbury BBQ Chicken Pizza (New recipe) –  We’re going to see how this recipe goes.  The instructions say to cook it on a grill, but I don’t have a grill to use, so we’ll see how I do with baking it instead.

Thursday – Cordon Bleu, Corn, and Pear Slices

Friday – Mom’s Birthday – Not sure of the exact plans yet, but I know I don’t have to worry about cooking

Saturday – Leftover Pillsbury Grands! Mini Pizzas and Side Salad

Sunday – Burgers and Fries
