Meal Plan Monday

I am very happy to say that my second Meal Plan Monday week went far smoother than my first one did.  I actually ate everything that I planned.  I did have a few bumps though.  I must say that there’s nothing like getting ready to cook your pie shell only to find that it was older than you thought and it crumbled into pieces all over the pie plate.  That one required a quick trip to the grocery store!

I did try a new recipe last week.  I made Easy BBQ Chicken in the Crockpot last Tuesday.  The recipe was meant to feed six, so I made some changes to cook a smaller amount.  I made two chicken breasts with the plan of cooking enough to get two meals out of it.  I still cooked it for the same amount of time though, and that’s where it went wrong for me.  It was to cook 3-4 hours on high.  By three hours the sauce had pretty much been cooked until it was almost dry.  The chicken ended up being pretty dry too.  The flavor was really good though.  I definitely want to make this one again, but next time I won’t cook it for as long.

I was proud of myself for using the Crockpot last week too.  The Crockpot was Jason’s thing, so I’m not used to cooking with it.  I did buy the Crockpot liners for it.  Now those were money well spent.  As a single mom with an almost three year old I don’t have time to spend cleaning the Crockpot (and what a mess it would have been).  Being able to just throw the liner away was fantastic!

The name of the game for this week is leftovers!  I have enough of the Easy BBQ Chicken and the Chicken Black Bean Burritos for one more meal each, and the Taco Pie I made will go for another three meals.  I don’t mind eating leftovers.  Being able to quickly heat something up is nice when you get home late and have a toddler that doesn’t want you to cook.  Plus it’s not constantly eating the easy frozen foods either.

Monday – Leftover Easy BBQ Chicken and Corn

Tuesday Crockpot Apricot Chicken and Grands (Jason has made this for us in the past, but I’m going to try to make a smaller batch than we usually made.)

Wednesday – Leftover Chicken and Black Bean Burritos

Thursday – Leftover Taco Pie

Friday – Chicken Nuggets and Baked Sweet Potatoe

Saturday – Pizza Night

Sunday – Easter Dinner (I have to bring the rolls.)

  1. I really need to get back into meal planning and sticking to it. On a side note, I love crock pot liners! I want to hug whomever invented them. 😉
