Meal Plan Monday #20

Last week the recipe I reviewed was Crispy Cheddar Chicken. Jason had made these once in the past, but they hadn’t agreed with him because of all the dairy, so we had never made them again. I had enjoyed them though, so I thought I’d make them. To prepare the chicken you dip the pieces into the three ingredients. I had remembered that Jason had made a comment when he made them that he hadn’t needed half of what it had called for, so a lot had been thrown away, so I made sure to only put a little out. That worked out really well. I figured if I needed more I could add it, but the amount I put out was plenty. I only made two chicken breasts (the recipe calls for four), and I found I could only eat one. The pieces looked so small when they were cooked, but I found them fairly filling. Especially with the rice I made. The only thing that was really a problem was that I couldn’t find the Progresso sauce anywhere in my store. I had found it the first time we made it though. I ended up getting some Cheddar Cheese soup to drizzle over the top, but it wasn’t really needed. That just got soaked in, so next time I think I would just skip it. Less money and less calories!

Saturday -Leftover Crispy Cheddar Chicken and Rice
Sunday – Burgers and Corn on the Cob
